My Favorite Pineapple Cheesecake Recipe

Tonight I’m going to share another of my favorite cheesecake recipes. This one is really not complicated to make at all; however, your dinner or party guests will think you spent hours slaving over a hot stove in the kitchen. 




Easy Recipe for Pineapple Cheesecake

Ingredients:

  • 16 graham crackers, crushed
  • 1 cup drained crushed pineapple
  • 1 and 1/2 pound creamed cheese
  • 1 cup sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 pint sour cream

Preparation:

  1. Preheat oven to 350 degrees.
  2. Drain pineapple (You can drink the juice)
  3. Pat graham cracker crumbs into bottom of large angel food cake mold. (This type of pan makes removal much easier)
  4. Add 1 cup crushed pineapple.
  5. In a large bowl, cream remaining ingredients in order listed.
  6. Pour mixture over pineapple.
  7. Bake for 45 minutes to 1 hour or until firm.
  8. Remove from oven and chill for at least 3 hours before serving.
  9. When serving, top each slice with a tablespoon of the remaining pineapple and a dollop of whipped cream or Cool Whip.  You can also garnish with a mint sprig for color and even a slice or lemon or lime.
