This is my favorite cheesecake recipe. The result is a dessert that is
especially rich and creamy. It’s so good, in fact, that even when entertaining
only a few dinner guests, I make at least two since people invariably come back
for seconds. Plus, I like to have a little left over to enjoy the next day.
To be totally honest, though, I sometimes make this dessert simply
because I’m in the mood to be self-indulgent and cheesecake has always been one
of my preferred comfort foods. There’s just something about sinking my teeth
into a slice of moist, luscious cheesecake that makes me feel good all over.
Easy Recipe for Mandarin Orange Cheesecake
Ingredients:
- 1 cup graham cracker crumbs
- 2 and 1/4 cups sugar
- 1/4 cup butter or margarine, melted
- 5 packages (8 ounce) cream cheese
- 6 eggs
- 1/2 cup heavy cream
- 1 teaspoon lemon flavoring
- 1/4 cup flour
- 1/4 teaspoon salt
- 1 can (11 ounces) mandarin orange segments, drained
- 1 small jar apple jelly, melted
Preparation:
- Preheat oven to 425 degrees.
- Combine crumbs, 1/4 cup sugar, and melted butter.
- Press mixture into greased 9-inch spring-form pan.
- Beat cheese until fluffy.
- Add eggs, one at a time, beating until smooth.
- Mix remaining sugar with flour and salt.
- Add sugar mixture to cream cheese and eggs.
- Beat until smooth.
- Pour into crust.
- Bake at 425 degrees for 15 minutes.
- Reduce heat to 250 degrees.
- Bake for 1 hour and 15 minutes.
- Remove from oven and allow cake to cool.
- Spoon melted apple jelly over top.
- Arrange mandarin orange segments on top.
- Refrigerate for at least 2 hours before serving.
